A one minute video showing the process of throwing a pot in ice cream, the texture changes as it melts and we re-freeze it using liquid nitrogen to extend the working time. The liquid nitrogen evaporates very quickly so although Charlie needs gloves when pouring it by the time David comes to re-work the ice-cream there is no danger of frostbite.
